"Green Groupies" Salad

“Green Groupies” Salad

Ingredients:

- 2 cups chopped cucumbers (2-3 medium cucumbers; do not peel)

- Generous pinch of Himalayan sea salt

- 2 ripe avocados, peeled and diced

- 1 Tbsp lime juice

- 1 ½ Tbsp fresh mint, finely chopped

- Crumbled feta cheese (to taste, or approximately ½ cup)

- Optional: Fresh, diced tomatoes

Directions:

1. Toss all ingredients. Enjoy!
