Carrot Cake Bites

Yield: 4 servings (3 balls per serving)

Ingredients:

- 2 medium carrots (about 1 ¼ cups), finely grated/shredded

- 3 Tbsp natural nut butter (almond, cashew or peanut)

- 1 Tbsp raw honey

- 1 tsp cinnamon

- ¼ cup unsweetened coconut flakes

Directions:

1. Roughly chop carrots before adding to blender or food processor (should come out finely grated).

2. Place grated carrots in bowl, and crush pecans in food processor. Place crushed pecans in same bowl as grated carrots, and add in remaining ingredients. Mix thoroughly.

3. Roll mix into balls. Cover with more coconut, if your heart desires.
