Turkey Sausage Spinach Frittatas

Yield: 12 mini frittatas. Serving size: 3 frittatas.

Ingredients:

- 8 eggs

- ¾ cup skim milk (may sub for unsweetened almond milk)

- ¾ cup reduced-fat cheese, grated

- ¾ cup turkey sausage crumbles, cooked (I purchase turkey sausage crumbles that are pre-cooked)

- 2 cups spinach, finely chopped (optional: swap for any veggies of choice)

- ¼ tsp each, salt & pepper

Directions:

1. Preheat oven to 375°F. Whisk eggs and milk in a bowl. Stir in spinach, cheese, turkey sausage, salt, pepper.

2. Pour mix into standard-sized non-stick muffin pan. Bake 25-30 minutes (10 – 15 minutes for mini muffin pan), until eggs are cooked through (tops are just starting to lightly brown and puff up).
