Yield: 1 serving

Ingredients:

- 4 oz ground turkey or cubed chicken (I use low-sodium canned chicken)

- 1 tsp ginger

- 1 tsp garlic, minced

- ¼ cup (each) onions, carrots, bell peppers- chopped

- ½ cup (each) mushrooms & broccoli- chopped

- 2 Tbsp soy sauce, low-sodium

- 2/3 cup brown rice OR cauliflower rice, measured and cooked

- Olive oil (enough to sauté veggies)

Directions:

1. Drizzle olive oil in skillet. Add veggies and sauté to liking.

2. Add chicken, ginger, minced garlic and soy sauce. Mix/heat until all ingredients are well-combined. 3. Serve over brown rice (high-activity day) or cauliflower rice (low-activity day). 4. Yes, it’s that simple.
