Banana Blueberry Muscle Muffins

Yield: >12 muffins. Serving size: 2 muffins.

Dry Ingredients:

- ¾ cup old-fashioned oats

- ½ cup Stevia for baking

- 1 serving vanilla or unflavored protein powder

- ½ tsp baking soda

- ½ tsp baking powder

- 1 tsp cinnamon

- ½ tsp salt

Wet ingredients:

- 1 cup egg whites

- 1 egg

- 1 medium banana

- ½ cup low-fat cottage cheese

- 1 tsp vanilla

Do not blend:

- 120 g blueberries, frozen

Directions:

1. Preheat oven to 350°F. Blend dry ingredients until oats are flour, then pour into separate bowl.

2. Blend wet ingredients until smooth, then combine wet and dry ingredients. Blend together.

3. Pour into standard-size muffin pan, then press blueberries into muffins.

4. Bake 25-30 minutes, or until cooked through (toothpick inserted in center comes out clean).

5. Let sit ~5 minutes before eating. Store in fridge.
