Almond Butter Breakfast Cookies

Yield: 16 cookies. Serving size: 2 cookies.

Ingredients:

- 1 small banana

- 2 Tbsp raw honey

- 2 Tbsp brown sugar

- ½ cup natural nut butter (almond, cashew or peanut)

- ½ cup old-fashioned oats

- ¼ cup oat flour

- ¼ cup dark chocolate chips or cinnamon morsels

- 1 tsp baking soda

- ½ tsp vanilla extract

- Pinch of salt

Directions:

1. Preheat oven to 350°F. Mash banana with honey, nut butter and chocolate chips.

2. Mix in remaining ingredients.

3. Use tablespoon to scoop mix onto greased baking tray. Bake for 9 minutes.
