Parmesan Chicken Strips

Ingredients:

- 1-2 lbs boneless chicken breasts

- Parmesan cheese, grated

- Light Italian dressing

- Panko bread crumbs

In advance-

  1. Trim fat off of chicken. Cut into strips (~1”). Marinate in Italian dressing (enough dressing so that the chicken strips are covered) for ~4 hours in refrigerator.

Directions:

1. Preheat oven to 350°F. Prepare breading: equal parts of Parmesan cheese and panko bread crumbs.

2. Roll chicken strips in breading to cover fully. Lay strips in 9 x 14” pan, sprayed with Pam.

3. Bake covered for 20 minutes. Uncover and bake until done (~15-20 additional minutes).
